Nisin is a natural food antimicrobial product made by fermentation of Lactococcu Lactis/ It is used to protect food products against pathogen and gram positve spoilage bacteria. The product is heat resistant and non-dairy based, and is supplied as a dried brown powder containing the Nisin and sodium chloride. Nisin has been shown to protect Ricotta for upto 55 days at 100mg/L use level.with no impact on taste.
